out of this world potatoes #2 - sneaky potatoes

Ok, so potatoes are starchy and don't offer that much nutrition. But they really are a good side dish. Just not the best way to get those complex carbs into our diet. A solution, even for the picky eater? Sneak in a sweet potato. They're loaded with all kinds of good stuff, but they cook up the same as baking potatoes & have a subtle enough flavor that with a bit of seasoning, it's hard to tell these aren't just pure mashed potatoes.


1 medium russet potatoes
1 large sweet potato (the yellowish ones, not yams)
2 T butter
1 t thyme
2 t salt
1/2 cup milk

1. Peel potatoes (both kinds) & chop into 1/2" cubes.
2. Place potatoes in a large pot with enough water to cover potatoes plus 1 extra inch of water. Bring to a boil over high heat.
3. When water boils, reduce heat to medium and remove cover. Cook for 10 minutes more.
4. Drain potatoes and set aside.
5. In the pot over medium heat, melt butter. Add thyme and salt.
6. Add potatoes to pot. Using a wire whisk or potato ricer, mash potatoes just barely.
7. Add milk and continue mashing until lumps are gone.
