Perfect for a potluck, a picnic, or hosting a summer BBQ, these skewers are full of flavor and don't need any extra dressing up. The flavor of the marinade doesn't overpower the dish, yet brings plenty of tenderness and spunk. This is meant to make lots -enough for a fun summer chicken salad that I'll post soon.
Prep Time: 10 minutes for marinade, 15 minutes for skewering
Cook Time: 8 minutes (20 if all the skewers won't fit and you have to do 2 rounds of grilling)
4 pounds chicken tenders
1/2 cup soy sauce
1/4 cup fresh squeezed lemon juice
1/4 cup apple cider vinegar
1/4 cup honey
1/4 cup olive oil
1 t salt
1 t cumin
1 t red pepper flakes
1. Mix together all ingredients except chicken tenders in a gallon size zipper bag.
2. Place chicken tenders in bag and let marinate in fridge for at least 2 hours. Meanwhile, soak wooden skewers in water (this helps them only burn a bit, but not disintegrate).
3. Heat grill to high.
4. Using tongs, remove chicken tenders from marinade one at a time, and thread onto wooden skewers.
5. Cook for about 4 minutes on each side until tenders are just barely done & juicy.
6. Serve immediately.
