easy guacamole
I toyed with the idea of calling this "Gourmet Guacamole" because I almost always get compliments and there's never any leftover. People are often stunned to find out my method because it's deceptively easy. But then I feared no one would look at it if it looked hard. So here's easy, gourmet guac that can be whipped up in moments:
3 whole avocados, ripe enough to be soft but not mushy
1/2 cup salsa (your fav - whatever floats your boat)
1 T fresh or bottled lime juice
1T salt
1. Cut avocados in half lenthwise. Scoop out the fruit from the peel. (A hint: to remove the pit, take a good hit at it with a chef knife. The knife should get "stuck" in the pit. Then you can wiggle the pit out with the knife, leaving behind just the fruit of the avocado.
2. Mash with a fork to your desired chunkiness.
3. Add remaining ingredients, stirring well.
4. Get ready to make another batch, because this will be gone fast.
