balsamic vinaigrette

Yummy, basic, good for you, and so very easy to throw together:


1/4 cup olive oil
1/4 cup balsamic vinegar
dash pepper, if desired

Whisk together the oil & vinegar (and pepper, if using) until completely combined and vinegar is suspended within the oil (there shouldn't be any dark spots of vinegar left). Pour over a fall salad, or refrigerate for up to two weeks.
