crockpot bbq chicken
***A pork roast will work just as well here - just follow the same instructions (update: approximately a 3 pound roast).
BBQ anything is good, but meat cooked in BBQ sauce & slathered with BBQ sauce & served with bread is even better. This chicken makes really good sandwiches, especially served with fresh avocado-lime slaw. Just remember - any BBQ dish is only as good as the sauce used to make it, so buy the good stuff, even if it's a couple dollars extra.
6-8 boneless, skinless chicken breasts (fresh or frozen)
1 16oz. bottle really good BBQ sauce, divided
1/4 cup oil
2 T salt
1 T pepper
1/4 cup brown sugar
2 T Worcestershire sauce
1. Place chicken in crockpot.
2. Measure out 1/2 cup BBQ sauce and set aside in fridge. Mix remaining sauce with oil and spices; pour on top of chicken.
3. Cook on low for 3 hours for fresh chicken, on high for frozen chicken.
4. Remove chicken and shred using 2 forks.
5. Return chicken to crockpot and add reserved 1/2 cup BBQ sauce. Cook one hour more.
6. Place on sandwich rolls with avocado-lime slaw.

and perhaps this for dinner tomorrow to go with the rest of the slaw and those thick rolls that are threatening to mold in my pantry? How big of a pork roast? That's what I got :)
